Ingredients

  • 12 oz (340 g) spaghetti
  • 2 tbsp olive oil
  • 1 lb (450 g) salmon fillets, skin removed, cut into 1-inch cubes
  • Salt and pepper, to taste
  • 1 tsp smoked paprika
  • 1-2 tsp cut large dried chili  (adjust to preference)
  • 4 cloves garlic, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley or basil, chopped, for garnish
  • Zest of 1 lemon

Instructions

  1. Cook the Spaghetti: In a pot of salted boiling water, cook spaghetti according to package instructions until al dente. Drain and set aside.
  2. Season and Cook Salmon: In a skillet, heat 1 tbsp olive oil over medium-high heat. Season the salmon cubes with salt, pepper, and smoked paprika. Sear the salmon for 2-3 minutes on each side until golden brown and cooked through. Set aside.
  3. Sauté Aromatics: In the same skillet, add the remaining olive oil. Add garlic and chili flakes, cooking until garlic is fragrant but not browned, about 1 minute.
  4. Add Tomatoes and Simmer: Add cherry tomatoes and cook until they soften and release juices, about 2-3 minutes.
  5. Combine and Finish: Add the cooked spaghetti to the skillet, tossing it in the sauce. Gently fold in the cooked salmon pieces, ensuring not to break them up too much. Adjust seasoning if needed.
  6. Garnish and Serve: Top with fresh parsley or basil and a sprinkle of lemon zest for brightness. Serve immediately.
