Ingredients

  • 12 oz (340 g) spaghetti
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 8 oz (225 g) mushrooms (button or cremini), sliced
  • 1-2 tsp red chili flakes (adjust to your spice preference)
  • 1/4 cup white wine (optional, or substitute with vegetable broth)
  • 1/2 cup vegetable broth
  • Salt and black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese for topping (optional)

Instructions

  1. Cook the Spaghetti: Bring a pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add the garlic and onions, cooking until fragrant and onions are soft.
  3. Cook Mushrooms and Spices: Add the mushrooms and cook until they’re golden brown, releasing their juices. Sprinkle in the chili flakes and season with salt and pepper.
  4. Deglaze and Simmer: Pour in the white wine (or vegetable broth) and simmer until it reduces by half. Add the vegetable broth and let it simmer for 3-4 minutes to blend flavors.
  5. Combine: Add the drained spaghetti into the skillet, tossing everything together. Adjust seasoning if necessary.
  6. Garnish: Sprinkle with chopped parsley and grated Parmesan cheese, if desired.
