Ingredients
- 12 oz (340 g) spaghetti
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 medium onion, finely chopped
- 8 oz (225 g) mushrooms (button or cremini), sliced
- 1-2 tsp red chili flakes (adjust to your spice preference)
- 1/4 cup white wine (optional, or substitute with vegetable broth)
- 1/2 cup vegetable broth
- Salt and black pepper, to taste
- 1/4 cup fresh parsley, chopped
- Grated Parmesan cheese for topping (optional)
Instructions
- Cook the Spaghetti: Bring a pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add the garlic and onions, cooking until fragrant and onions are soft.
- Cook Mushrooms and Spices: Add the mushrooms and cook until they’re golden brown, releasing their juices. Sprinkle in the chili flakes and season with salt and pepper.
- Deglaze and Simmer: Pour in the white wine (or vegetable broth) and simmer until it reduces by half. Add the vegetable broth and let it simmer for 3-4 minutes to blend flavors.
- Combine: Add the drained spaghetti into the skillet, tossing everything together. Adjust seasoning if necessary.
- Garnish: Sprinkle with chopped parsley and grated Parmesan cheese, if desired.
