Shrimp Spaghetti
Shrimp Spaghetti is a flavorful, quick pasta dish with garlic, lemon, and a touch of spice. Here’s a simple recipe:
Ingredients:
- 8 oz spaghetti
- 1 lb large shrimp, peeled and deveined
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 1/4 tsp red pepper flakes (optional, for spice)
- 1/4 cup dry white wine or chicken broth
- Fresh cream
- Salt and pepper, to taste
- 1/4 cup grated Parmesan cheese
- Chopped fresh parsley and shrimp roe for garnish
Instructions:
- Cook the Spaghetti:
- Boil a pot of salted water and cook the spaghetti until al dente. Drain, reserving a bit of pasta water.
- Cook the Shrimp:
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes per side until pink and opaque. Remove the shrimp and set aside.
- Make the Sauce:
- In the same skillet, add the remaining olive oil, garlic, and red pepper flakes (if using). Sauté for about 1 minute, until fragrant.
- Pour in the white wine or chicken broth, stirring to deglaze the pan. Let it cook for 2-3 minutes until slightly reduced.
- Add fresh cream, stirring to combine.
- Combine and Finish:
- Return the shrimp to the skillet, along with the cooked spaghetti. Toss everything to coat. If it seems dry, add a bit of the reserved pasta water.
- Stir in the Parmesan cheese and season with salt and pepper to taste.
- Serve:
- Garnish with fresh parsley and Shrimp Roe or Parmesan if desired.
