Ingredients:

For the Pie Crust:

  • 1 1/2 cups (190 g) all-purpose flour
  • 1/2 cup (115 g) unsalted butter, cold and cut into small cubes
  • 1/4 cup (50 g) granulated sugar
  • 1/4 tsp salt
  • 1/4 cup (60 ml) ice water (more if needed)

For the Pumpkin Filling:

  • 1 can (15 oz/425 g) pumpkin puree
  • 3/4 cup (150 g) granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 3 large eggs
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120 ml) whole milk

Instructions:

  1. Prepare the Pie Crust:
    • In a large bowl, mix flour, sugar, and salt.
    • Add the cold butter and use a pastry cutter or your fingers to work it into the flour mixture until it resembles coarse crumbs.
    • Gradually add ice water, 1 tablespoon at a time, mixing just until the dough comes together.
    • Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Roll Out the Dough:
    • Preheat your oven to 375°F (190°C).
    • On a lightly floured surface, roll out the chilled dough to fit a 9-inch pie dish.
    • Carefully transfer the dough to the pie dish, pressing it into the bottom and sides. Trim any excess dough and crimp the edges if desired.
  3. Prepare the Filling:
    • In a large bowl, whisk together the pumpkin puree, sugar, cinnamon, ginger, cloves, nutmeg, and salt.
    • Beat in the eggs one at a time until well combined.
    • Gradually add the heavy cream and milk, mixing until smooth.
  4. Assemble the Pie:
    • Pour the pumpkin filling into the prepared pie crust.
    • Smooth the top with a spatula.
  5. Bake:
    • Bake in the preheated oven for 50-60 minutes, or until the filling is set and a knife inserted into the center comes out clean.
    • If the crust starts to brown too quickly, cover the edges with aluminum foil.
  6. Cool:
    • Allow the pie to cool on a wire rack for at least 2 hours before serving. This helps the filling set properly.
  7. Serve:
    • Serve the pie as is or with a dollop of whipped cream or a scoop of vanilla ice cream.
