Macaroni and Cheese

Macaroni and Cheese is the ultimate comfort food: creamy, cheesy, and satisfying. This recipe features a rich, velvety cheese sauce that coats every piece of pasta, creating a dish that’s perfect for any occasion.

Ingredients

  • 8 oz (about 2 cups) elbow macaroni
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk (whole milk works best)
  • 1 cup heavy cream (for extra creaminess)
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup Gruyère cheese, shredded (or use Monterey Jack or mozzarella)
  • Salt and black pepper, to taste
  • 1/2 tsp mustard powder (optional, for depth)
  • 1/4 tsp smoked paprika (optional, for flavor)
  • 1/2 cup panko bread crumbs (optional topping)
  • 2 tbsp melted butter (optional, for topping)

Instructions

Step 1: Cook the Pasta

  1. Boil Macaroni: Bring a large pot of salted water to a boil, and cook the macaroni according to the package directions until al dente. Drain and set aside.

Step 2: Make the Cheese Sauce

  1. Melt Butter and Add Flour: In a medium saucepan, melt the butter over medium heat. Sprinkle in the flour, whisking continuously for 1-2 minutes to form a roux, until it’s golden and smooth.
  2. Add Milk and Cream: Gradually pour in the milk and cream, whisking constantly to prevent lumps. Continue cooking for 5-7 minutes until the sauce thickens.
  3. Add Cheese and Seasoning: Remove from heat and stir in the cheddar and Gruyère cheese until melted and smooth. Season with salt, black pepper, mustard powder, and smoked paprika if desired.

Step 3: Combine Pasta and Sauce

  1. Combine and Mix: Add the cooked macaroni to the cheese sauce, stirring until all the pasta is coated.

Optional Step 4: Add a Crunchy Topping

  1. Make Topping: Preheat the oven to 350°F (175°C). If you like a crunchy topping, combine the panko bread crumbs with melted butter in a small bowl.
  2. Bake: Transfer the mac and cheese to a baking dish, sprinkle with the breadcrumb mixture, and bake for 15-20 minutes until golden and bubbly.

Step 5: Serve

  • Serve the macaroni and cheese hot, garnished with a sprinkle of fresh parsley if desired.

Tips for Perfect Macaroni and Cheese

  • Choose Good Melting Cheeses: Cheddar and Gruyère create a smooth, flavorful sauce, but you can also use mozzarella, fontina, or even a bit of blue cheese for extra flavor.
  • Creaminess: Heavy cream adds richness, but you can use all milk if preferred.
  • Bake or Stovetop: This recipe can be served right off the stove or baked for a bubbly crust.

This classic macaroni and cheese is creamy, cheesy, and irresistibly comforting. Enjoy it as a main or a side dish!
