Lamington Cake
Lamington cake is a classic Australian dessert made of soft sponge cake squares coated in a layer of chocolate icing and then rolled in desiccated coconut. They’re deliciously fluffy, moist, and perfect with a cup of tea or coffee. Here’s a simple recipe to make them:
Ingredients:
For the Sponge Cake:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
For the Chocolate Coating:
- 2 cups powdered sugar
- 1/3 cup cocoa powder
- 1/2 cup boiling water
- 2 tbsp unsalted butter, melted
For Assembly:
- 2 cups desiccated coconut
Instructions:
- Prepare the Sponge Cake:
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan. Line with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, then mix in the vanilla extract.
- Add the dry ingredients to the wet mixture, alternating with the milk, until well combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely, then cut it into 16 squares.
- Make the Chocolate Coating:
- In a bowl, sift together the powdered sugar and cocoa powder. Add boiling water and melted butter, stirring until smooth. The mixture should be thin enough for dipping but thick enough to coat.
- Assemble the Lamingtons:
- Place the desiccated coconut in a shallow bowl.
- Dip each cake square into the chocolate coating, letting any excess drip off.
- Roll the coated cake in the coconut until fully covered.
- Set and Serve:
- Place the Lamingtons on a wire rack to set. Enjoy once the chocolate is firm!
