Lamington cake is a classic Australian dessert made of soft sponge cake squares coated in a layer of chocolate icing and then rolled in desiccated coconut. They’re deliciously fluffy, moist, and perfect with a cup of tea or coffee. Here’s a simple recipe to make them:

Ingredients:

For the Sponge Cake:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk

For the Chocolate Coating:

  • 2 cups powdered sugar
  • 1/3 cup cocoa powder
  • 1/2 cup boiling water
  • 2 tbsp unsalted butter, melted

For Assembly:

  • 2 cups desiccated coconut

Instructions:

  1. Prepare the Sponge Cake:
    • Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan. Line with parchment paper.
    • In a bowl, whisk together the flour, baking powder, and salt.
    • In a separate large bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, then mix in the vanilla extract.
    • Add the dry ingredients to the wet mixture, alternating with the milk, until well combined.
    • Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
    • Let the cake cool completely, then cut it into 16 squares.
  2. Make the Chocolate Coating:
    • In a bowl, sift together the powdered sugar and cocoa powder. Add boiling water and melted butter, stirring until smooth. The mixture should be thin enough for dipping but thick enough to coat.
  3. Assemble the Lamingtons:
    • Place the desiccated coconut in a shallow bowl.
    • Dip each cake square into the chocolate coating, letting any excess drip off.
    • Roll the coated cake in the coconut until fully covered.
  4. Set and Serve:
    • Place the Lamingtons on a wire rack to set. Enjoy once the chocolate is firm!
