Ham, Mushroom, and Spinach Quiche

Quiche is a savory custard pie that originates from France. It typically consists of a pastry crust filled with a mixture of eggs, cream or milk, cheese, meat, seafood, and/or vegetables. Ingredients:

For the crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold butter, cut into small cubes
  • 3-4 tablespoons ice water

  • 1 tablespoon olive oil
  • 1 cup ham, diced
  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach, roughly chopped

  • 1 cup heavy cream or half-and-half

Instructions:

Make the crust:

  1. Prepare the dough: In a large bowl, mix the flour and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  2. Add water: Gradually add ice water, one tablespoon at a time, until the dough comes together. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Roll out: Preheat the oven to 375°F (190°C). Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the dish, pressing it against the bottom and sides. Trim any excess dough and crimp the edges if desired.
  4. Blind bake: Line the crust with parchment paper or aluminum foil and fill with pie weights or dried beans. Bake for 10-12 minutes. Remove the weights and lining and bake for 5 minutes until the crust is lightly golden. Remove from oven and let cool.

Make the filling:

  1. Cook vegetables and ham: Heat the olive oil over medium heat in a large skillet. Add the diced ham and cook for 2-3 minutes until it browns. Add the mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes. Add the spinach and cook until wilted about 2 minutes. Remove from heat and set aside.
  2. Mix filling: In a large bowl, whisk together the eggs, cream, salt, pepper, and nutmeg (if using).

Assemble the quiche:

  1. Layer ingredients: Spread the ham, mushroom, and spinach mixture evenly over the bottom of the pre-baked crust. Sprinkle the shredded cheese on top.
  2. Add egg mixture: Pour the egg and cream mixture over the filling, ensuring it is evenly distributed.
  3. Bake: Bake the quiche in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden brown. A knife inserted into the center should come out clean.
