Ingredients:

For the Muffins:

  • 1 1/2 cups (190 g) all-purpose flour
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (50 g) packed brown sugar
  • 1/4 cup (60 g) unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (115 g) unsalted butter, melted and cooled
  • 2 large ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup (120 ml) milk
  • 1 tsp vanilla extract
  • 1/2 cup (90 g) chocolate chips or chunks

  • A sprinkle of sugar

Instructions:

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together the flour, granulated sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients:
    • In another bowl, mix the melted butter, mashed bananas, eggs, milk, and vanilla extract until well combined.
  4. Combine:
    • Add the wet ingredients to the dry ingredients and gently fold until just combined. Be careful not to overmix; a few lumps are okay.
    • Fold in the chocolate chips or chunks.
  5. Fill Muffin Tin:
    • Divide the batter evenly among the muffin cups, filling each about 2/3 full. If desired, sprinkle a few extra chocolate chips or chunks on top of each muffin, and a light sprinkle of sugar for extra crunch.
  6. Bake:
    • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with just a few crumbs.
  7. Cool:
    • Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
