Chicken Taquitos

Chicken taquitos are crispy, flavorful rolled tacos that make for a great snack or meal. They’re filled with seasoned chicken and can be served with a variety of toppings and dips. Here’s a simple recipe for homemade chicken taquitos:

Ingredients:

For the Filling:

  • 2 cups (300 g) cooked chicken, shredded (rotisserie chicken works well)
  • 1/2 cup (80 g) finely chopped onion
  • 2 cloves garlic, minced
  • 1 cup (150 g) shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup (120 ml) salsa or enchilada sauce
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup (fresh cilantro), chopped (optional)

For Assembly:

  • 12 small flour or corn tortillas
  • Vegetable oil (for frying)

For Serving (Optional):

  • Sour cream
  • Salsa
  • Guacamole
  • Shredded lettuce
  • Sliced jalapeños

Instructions:

  1. Prepare the Filling:
    • In a large bowl, combine the shredded chicken, chopped onion, minced garlic, shredded cheese, salsa or enchilada sauce, cumin, chili powder, paprika, salt, pepper, and cilantro (if using). Mix well until all ingredients are evenly combined.
  2. Heat the Tortillas:
    • To prevent the tortillas from cracking when rolling, heat them briefly. Place the tortillas in a dry skillet over medium heat for about 30 seconds per side until warm and pliable. Alternatively, wrap them in a damp paper towel and microwave for about 30 seconds.
  3. Assemble the Taquitos:
    • Spoon a small amount of the chicken mixture (about 2-3 tablespoons) onto the center of each tortilla.
    • Roll the tortillas tightly around the filling, securing them with toothpicks if needed.
  4. Fry the Taquitos:
    • Heat about 1/2 inch (1.25 cm) of vegetable oil in a large skillet over medium heat.
    • Fry the taquitos in batches, turning them occasionally, until they are golden brown and crispy on all sides, about 3-4 minutes per batch.
    • Remove the taquitos with a slotted spoon and drain them on paper towels.
  5. Serve:
    • Serve the taquitos hot with your choice of toppings and dips, such as sour cream, salsa, guacamole, shredded lettuce, and sliced jalapeños.

Oven-Baked Option:

If you prefer a healthier version, you can bake the taquitos:

  1. Preheat your oven to 400°F (200°C).
  2. Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
  3. Brush the taquitos lightly with vegetable oil.
  4. Bake for 15-20 minutes or until crispy and golden brown.
