Chicken Tacos

Tacos are a traditional Mexican dish consisting of a folded or rolled tortilla filled with a variety of ingredients. They are a popular street food and are widely enjoyed across the world for their versatility and flavor.

 Ingredients:

For the chicken:

  • 1 lb (450g) boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth or water
  • Juice of 1 lime

For the toppings:

  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup finely chopped red onion
  • 1/2 cup chopped fresh cilantro
  • 1 avocado, sliced
  • 1 cup shredded cheese (Cheddar, Monterey Jack, or Mexican blend)
  • Sour cream
  • Salsa or pico de gallo

For the tortillas:

  • 8 small flour or corn tortillas

Instructions:

  1. Prepare the chicken:
    1. In a small bowl, mix together the cumin, paprika, chili powder, garlic powder, onion powder, oregano, salt, and black pepper.
    2. Rub the spice mixture evenly over the chicken breasts or thighs.
    3. Heat olive oil in a skillet over medium heat. Add the chicken and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has an internal temperature of 165°F (74°C).
    4. Remove the chicken from the skillet and let it rest for a few minutes. Then, shred or dice the chicken into bite-sized pieces.
    5. Return the shredded chicken to the skillet and add the chicken broth or water. Simmer for a few minutes until the liquid is mostly absorbed and the chicken is coated with the spices. Stir in the lime juice.
  2. Prepare the tortillas:
    1. Heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are warm and pliable. Alternatively, you can wrap them in foil and warm them in the oven.
  3. Assemble the tacos:
    1. Place a portion of the spiced chicken in the center of each tortilla.
    2. Top with shredded lettuce, diced tomatoes, chopped red onion, and shredded cheese.
    3. Add slices of avocado and a dollop of sour cream.
    4. Garnish with fresh cilantro and serve with salsa or pico de gallo on the side.

Optional Add-Ins:

  • Pickled Jalapeños: For extra heat and flavor.
  • Hot Sauce: To add a spicy kick.
  • Black Beans or Corn: For additional texture and flavor.
