Chicken Quesadilla
A Quesadilla is a traditional Mexican dish that consists of a tortilla filled primarily with cheese and often other ingredients such as meat, vegetables, and spices. The tortilla is then folded in half and cooked until the cheese melts and the outside is crispy. It is a versatile and popular dish enjoyed in various forms across different cultures.
Ingredients:
- 2 cups cooked chicken, shredded or diced
- 1 tablespoon olive oil
- 1/2 cup onion, finely chopped
- 1/2 cup bell peppers, finely chopped (any color)
- 1 clove garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 cups shredded cheese (Cheddar, Monterey Jack, or a Mexican blend)
- 8 large flour tortillas
- Optional toppings: sour cream, salsa, guacamole, chopped cilantro
Instructions:
- Prepare the filling:
- Heat the olive oil in a skillet over medium heat. Add the onion and bell peppers and sauté until they are softened, about 5 minutes.
- Add the minced garlic and cook for another minute.
- Stir in the shredded chicken, cumin, chili powder, salt, and pepper. Cook until the chicken is heated through and well combined with the spices, about 2-3 minutes. Remove from heat and set aside.
- Assemble the quesadillas:
- Heat a large skillet or griddle over medium heat.
- Place one tortilla on the skillet. Sprinkle about 1/4 cup of shredded cheese evenly over the tortilla.
- Spread a portion of the chicken mixture over the cheese.
- Sprinkle another 1/4 cup of shredded cheese on top of the chicken mixture.
- Place a second tortilla on top of the cheese and press down lightly.
- Cook the quesadillas:
- Cook the quesadilla for about 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Carefully flip the quesadilla using a spatula.
- Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat with the remaining tortillas and filling.
- Serve:
- Let the quesadillas cool for a minute before cutting them into wedges.
- Serve with optional toppings like sour cream, salsa, guacamole, and chopped cilantro.
