Caesar Salad
Caesar salad is a classic with crisp romaine lettuce, creamy dressing, croutons, and Parmesan. Here’s how to make an authentic Caesar salad from scratch, including a homemade Caesar dressing.
Salad Ingredients:
- 1 large head of romaine lettuce, chopped
- 1/2 cup freshly grated Parmesan cheese
- 1 cup croutons (homemade or store-bought)
Caesar Dressing Ingredients:
- 1 egg yolk (or 1 tbsp mayonnaise for a creamy base without raw egg)
- 1–2 cloves garlic, minced
- 1 tsp Dijon mustard
- 1 tbsp lemon juice (freshly squeezed)
- 1/2 tsp Worcestershire sauce
- 2–3 anchovy fillets, minced (optional, but traditional)
- 1/4 cup extra-virgin olive oil
- Salt and freshly ground black pepper, to taste
Instructions:
- Make the Dressing:
- In a bowl, whisk together the egg yolk, garlic, Dijon mustard, lemon juice, Worcestershire sauce, and anchovies (if using).
- Slowly drizzle in the olive oil while whisking constantly until the dressing is smooth and emulsified. Add salt and pepper to taste.
- Prepare the Croutons (Optional):
- For homemade croutons, cut day-old bread into 1-inch cubes, toss with olive oil, salt, and a little garlic powder, then bake at 375°F (190°C) for 10-15 minutes or until golden and crispy.
- Assemble the Salad:
- Place the chopped romaine in a large salad bowl. Drizzle with the dressing and toss to coat the leaves evenly.
- Add croutons and Parmesan, and give it a final, gentle toss.
- Serve:
- Garnish with extra Parmesan shavings and freshly cracked black pepper.
