Blueberry Cake Bar

Ingredients:
Cake Layer:
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup sour cream or Greek yogurt
- 1 cup fresh or frozen blueberries
Crumb Topping:
- 1/3 cup all-purpose flour
- 2 tbsp granulated sugar
- 2 tbsp brown sugar
- 1/4 tsp cinnamon
- 2 tbsp cold unsalted butter, cubed
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- Make the Crumb Topping:
- In a small bowl, mix the flour, granulated sugar, brown sugar, and cinnamon.
- Add the cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Set aside.
- Prepare the Cake Batter:
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate large bowl, beat the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing until smooth.
- Mix in the sour cream or Greek yogurt until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined (don’t overmix).
- Assemble the Bars:
- Pour the batter into the prepared baking pan and spread it evenly.
- Gently fold in the blueberries.
- Sprinkle the crumb topping over the batter.
- Bake:
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan, then use the parchment paper overhang to lift the bars out and cut into squares.
