Ingredients:
- 2 cups (250 g) all-purpose flour
- 1/4 cup (50 g) granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup (115 g) unsalted butter, cold and cut into small cubes
- 1 cup (120 g) fresh or frozen cranberries, roughly chopped (if using frozen, do not thaw)
- 2/3 cup (160 ml) milk or cream (plus extra for brushing)
- 1 large egg
- 1 tsp vanilla extract (optional)
For the Glaze (Optional):
- 1/2 cup (60 g) powdered sugar
- 1-2 tbsp orange juice or milk
Instructions:
- Preheat Oven:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Mix Dry Ingredients:
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the Butter:
- Add the cold butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- Add Cranberries:
- Gently fold in the chopped cranberries.
- Prepare Wet Ingredients:
- In a small bowl, whisk together the milk or cream, egg, and vanilla extract (if using).
- Combine Dough:
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined. The dough will be slightly sticky.
- Shape and Cut:
