Mixed Berry Muffins

Ingredients:
- 1 1/2 cups (190 g) all-purpose flour
- 1/2 cup (100 g) granulated sugar
- 1/4 cup (50 g) packed brown sugar
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2 tsp baking powder
- 1/2 cup (115 g) unsalted butter, melted and slightly cooled
- 2 large eggs
- 1/2 cup (120 ml) milk (whole milk or 2%)
- 1 tsp vanilla extract
- 1 1/2 cups (225 g) mixed berries (fresh or frozen; if using frozen, do not thaw)
Optional Topping:
- 2 tbsp granulated sugar
- 1/2 tsp ground cinnamon
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
- Prepare Dry Ingredients:
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, salt, baking soda, and baking powder.
- Mix Wet Ingredients:
- In a separate bowl, whisk together the melted butter, eggs, milk, and vanilla extract until well combined.
- Combine Ingredients:
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix.
- Gently fold in the mixed berries. If using frozen berries, fold them in gently to prevent color bleeding into the batter.
- Fill Muffin Cups:
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Add Optional Topping:
- If using the optional topping, mix the granulated sugar and cinnamon and sprinkle it over the tops of the muffins before baking.
