Mixed Berry Muffins are a delicious and versatile treat, perfect for breakfast or a snack. They’re packed with juicy berries and have a tender crumb. Here’s a simple recipe to make mixed berry muffins:

Ingredients:

  • 1 1/2 cups (190 g) all-purpose flour
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (50 g) packed brown sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 cup (115 g) unsalted butter, melted and slightly cooled
  • 2 large eggs
  • 1/2 cup (120 ml) milk (whole milk or 2%)
  • 1 tsp vanilla extract
  • 1 1/2 cups (225 g) mixed berries (fresh or frozen; if using frozen, do not thaw)

Optional Topping:

  • 2 tbsp granulated sugar
  • 1/2 tsp ground cinnamon

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
  2. Prepare Dry Ingredients:
    • In a large bowl, whisk together the flour, granulated sugar, brown sugar, salt, baking soda, and baking powder.
  3. Mix Wet Ingredients:
    • In a separate bowl, whisk together the melted butter, eggs, milk, and vanilla extract until well combined.
  4. Combine Ingredients:
    • Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix.
    • Gently fold in the mixed berries. If using frozen berries, fold them in gently to prevent color bleeding into the batter.
  5. Fill Muffin Cups:
    • Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Add Optional Topping:
    • If using the optional topping, mix the granulated sugar and cinnamon and sprinkle it over the tops of the muffins before baking.
  7. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Cool:
    • Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
