Ingredients:
For the Pie Crust:
- 1 1/2 cups (190 g) all-purpose flour
- 1/2 cup (115 g) unsalted butter, cold and cut into small cubes
- 1/4 cup (50 g) granulated sugar
- 1/4 tsp salt
- 1/4 cup (60 ml) ice water (more if needed)

- 1 can (15 oz/425 g) pumpkin puree
- 3/4 cup (150 g) granulated sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1/2 tsp salt
- 3 large eggs
- 1 cup (240 ml) heavy cream
- 1/2 cup (120 ml) whole milk
Instructions:
- Prepare the Pie Crust:
- In a large bowl, mix flour, sugar, and salt.
- Add the cold butter and use a pastry cutter or your fingers to work it into the flour mixture until it resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, mixing just until the dough comes together.
- Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Roll Out the Dough:
- Preheat your oven to 375°F (190°C).
- On a lightly floured surface, roll out the chilled dough to fit a 9-inch pie dish.
- Carefully transfer the dough to the pie dish, pressing it into the bottom and sides. Trim any excess dough and crimp the edges if desired.
- Prepare the Filling:
- In a large bowl, whisk together the pumpkin puree, sugar, cinnamon, ginger, cloves, nutmeg, and salt.
- Beat in the eggs one at a time until well combined.
- Gradually add the heavy cream and milk, mixing until smooth.
- Assemble the Pie:
- Pour the pumpkin filling into the prepared pie crust.
- Smooth the top with a spatula.
- Bake:
- Bake in the preheated oven for 50-60 minutes, or until the filling is set and a knife inserted into the center comes out clean.
